Get your tickets for the Spring 2025 Courses XXVII Chefs’ Dinner at Fifty-One O One

The HFC Culinary Arts and Hospitality Management program is proud to announce the Spring 2025 Courses XXVII Chefs’ Dinner, a semi-annual event showcasing the talents of our culinary students and faculty. Please join us at Fifty-One O One, HFC’s student-run restaurant, on Saturday, April 5, at 6:00 p.m. The restaurant is in the John McDonald Student and Culinary Arts Center (Building M on the main campus),
Guests will enjoy a multi-course dining experience prepared by HFC’s talented culinary students under the guidance of expert faculty and professional chefs. The evening will begin with a cocktail reception at 6:00 p.m., followed by the first dinner course at 6:30 p.m.
This culinary extravaganza will feature exquisite cuisine and entertainment in support of the HFC Hospitality Scholarship Fund. Tickets are $65 per person, with $30 of the ticket price being tax-deductible. The proceeds from this special event will help students pursue their education in culinary arts and hospitality management.
Dinner Details
The following entrees will be served at the XXVII Chefs’ Dinner on April 5:
- Hors d'oeuvres
- Wild Onion Velouté Soup: Almond-crusted chicken medallion, sautéed greens
- Morel and White Asparagus Tartlette: Warm morel mushroom cream croustade, white asparagus coulis, petite herb salad, wild asparagus
- Sea Trout Escabeche: Marinated trout roe, pickled carrot, sauternes dressing
- Braised Beef Short Rib: Smoked bone marrow, red wine jus, English peas
- Raspberry Inspiration: Olive oil cake, raspberry, vanilla, coconut sorbet
As part of the dining experience:
- Coffee, tea, and soft drinks will be provided.
- House-made bread will be served.
- Beer and wine will be available to purchase for guests ages 21 and older with a valid photo ID.
