Three HFC Culinary students preparing dishes for the Fall Scholarship dinner in fall of 2023.

The HFC Culinary Arts + Hospitality Management department invites the public to its much-anticipated Spring Scholarship Event: Courses XXV Chef’s Dinner, a culinary extravaganza featuring exquisite dishes and entertainment in support of the HFC Hospitality Scholarship Fund.

Please join us for the dinner at Fifty-One O One – HFC’s student-run restaurant in the John McDonald Student & Culinary Arts Center (Building M on the main campus) – on Saturday, April 20, at 6:00 p.m.

HFC develops the next generation of Detroit’s great chefs and hospitality professionals. Sharing the experience is at the heart of why we operate the Fifty-One O One student-run restaurant.

The new look, feel, and menu at Fifty-One O One draws its inspiration from local farms and markets, focusing on exceptional ingredients at the peak of their season. The path from earth to plate remains clear, and the cuisine reflects the complex layers of subtle craft beneath a simple decorative style.

Courses XXV promises an unforgettable evening filled with gourmet delights and a celebration of culinary excellence. Guests will enjoy a lively cocktail hour with hors d’oeuvres, accompanied by the captivating sounds of the HFC Quartet. The evening will continue with a five-course dinner, expertly crafted to reflect the flavors of the season.

The culinary experience also includes coffee and tea service, as well as house-made breads to complement the carefully curated courses. Guests can enhance their dining experience with a selection of beer and wine available for purchase.

Dinner Details

The following entrees will be served at the Spring Scholarship Dinner:

  • Hors D’oeuvres: Assorted canapés
  • Stuffed Lamb Saddle: Spring onions, English peas, broad beans, natural jus
  • First of Season Asparagus: Morels, smoked potato, wild garlic
  • Slow-Cooked Hen’s Egg: Celeriac, Ibérico ham, hazelnut, Amontillado sherry
  • Sea Scallops: Ajo Blanco, Verjus, olive oil
  • Cherry Mousse: Roasted cherry Namelaka, pineapple whipped ganache, dark chocolate crumble, lime rickey sauce, coconut dacquoise [Note: the lime rickey sauce contains alcohol, most of which is removed during the cooking process.]

In addition:

  • Coffee and tea service will be provided.
  • House-made bread will be served.
  • Beer and wine will be available to purchase for guests ages 21 and over with a valid photo ID.

  • 6:00 p.m.: Cocktails
  • 6:30 p.m.: Dinner

Tickets

Tickets are $65 per person. Of that amount, $40 is a tax-deductible donation to the HFC Hospitality Scholarship Fund.

You may also send check or bring cash to the HFC Foundation Office on the third floor of the Welcome Center at 5101 Evergreen Rd., Dearborn, MI 48128-1495. Please make checks out to the HFC Foundation and make note in the memo section that payment is for the Spring Scholarship Dinner.

This dinner not only promises a culinary adventure but also serves a noble cause. By attending, guests will contribute to the education and development of future culinary professionals through the HFC Hospitality Scholarship Fund.

Parking

Parking is free. When arriving, please park in the Campus Safety lot or adjacent faculty lots. Guests should notify the Campus Safety that they are dining at Fifty-One O One.
